If I wrote a song for a quartet and was signed to an exclusive contract, could I rewrite that same song but for piano only and use that for another project (exclusive or non-exclusive) in the future?

Okay, well the simple answer is that technically since you were signed to be creating music exclusively for the other contract, you cannot use anything derivative in any way whatsoever for any other contract/project in the future. Whether it’s a piano arrangement or a symphonic concert.
